A selection from Smitten Kitchen Keepers - Toasted Ricotta Gnocchi with Pistachio Pesto. I am a sucker for any type of pesto, and if you haven't tried variations, you're missing out! In this recipe, Deb uses arugula instead of basil, but I've done pistachios with basil, too. Or walnuts. Or you can sub mint. But the tip about browning the gnocchi instead of boiling them? Always always do them that way 💚
Our Pesto Gnocchi is layered on a creamy ivory base, with generous splashes of bright pesto green that show up in darker and lighter patches, much like dressed pasta. She's finished with swirls of toasty brown and peppered with nutty brown speckles.
